
BRONCO TACOS!!
These tacos are the bomb diggity! My brother Tyler has been asking all week for homemade tacos. So today after his chemo treatments we hit up the store for some taco ingredients. These are simple to make, and very delicious. My dad is semi obsessed with these tacos. The meat is made from scratch, NO SEASONING PACKETS!! nope, nope, nope. A good friend of mine taught me to shallow fry soft tacos and i'll tell you what.. it makes all the difference!
Ingredients:
3 lbs. ground beef
1/4 c. olive oil
1 package small flour tortillas
1 large onion, diced
3 cloves garlic, minced
1 tbsp. cayenne pepper
2 tsp. dried oregeno
1 tsp. salt
1 tsp. pepper
1 can of diced tomatoes

1/3 c. vegetable oil
1/2 head of lettece
shredded cheese (of your choice, i used chedder)
1 ripe tomato, diced
1 ripe avacado, diced
sour cream/salsa/hot sauce/jalapeno peppers (whatever toppings you like in your taco!)
5-6 limes***
Sautee the onions in a large fry pan untill translucent, then add the minced garlic and cook for 1 minute. Mix in the cayenne pepper, oregeno, salt and pepper. Then add the meat and cook most of the way through, pour in the can of diced tomatoes and cook the rest of the way.
Take a smaller fry pan and heat the vegetable oil on med-high heat. Take a tortilla and spread a layer of cheese on half of it, then a scoop of the taco meat and spread out. Fold in half and shallow fry each side for 20-30 seconds, until golden brown and crispy.
Plate the taco, open it up and add inside whatever ingredients you want. Sour cream, avacado, salsa, tomatoes, lettece, olives, jalapeno peppers, more cheese... go nuts! But the simpler the flavors the better it tastes it seems. But one thing you CANNOT leave out is a big ol squeeze of lime juice. Its the key ingredient to magical flavor. The more the better, and just add some salt to taste. Enjoy!
*Serve along side with rice and beans of your choice. (Maybe lime celantro rice, just cook the rice with 1/2 cup chopped celantro, juice of a few limes, and 1 tbsp. salt)
